Mud, Fire, and Rustic Fun

On a gentle spring Saturday, April 18, Haida’s foreign teachers stepped out of the classroom and into the countryside. We gathered at Antman Tribe for a day of outdoor fun — mud, fire, and the simple joys of childhood.


The highlight of the day? Making Beggar’s Chicken and bamboo tube rice with their own hands.


Beggar's Chicken was no simple task: the chicken was marinated in advance, then wrapped in lotus leaves, followed by a layer of aluminum foil, and finally coated with a thick layer of black clay. Several teachers stepped up to get their hands muddy, sealing each package tightly before placing them into the stone‑built roasting pits. Over red‑hot coals, the aroma slowly began to emerge.


Bamboo tube rice was equally meticulous: bamboo was pre‑cut into sections, each with a natural “handle” for easy handling. Rice was mixed with diced carrots, green peas, sausage pieces, and a blend of seasonings. Teachers then stuffed the mixture into the bamboo tubes, sealed them, and placed them over the fire. The aroma of bamboo, rice, and meat intertwined — pure anticipation.


While waiting, we also made popcorn in a tin lunchbox: corn kernels inside, lid on, placed over the fire. When the time was right, we opened the box — and golden popcorn popped out. Some batches got a little burnt, of course, which we happily called “chocolate‑flavored popcorn.” Even the failed attempts became part of the day’s fun.


In addition to the bamboo rice we made ourselves, everyone also enjoyed wild‑fire rice steamed by the camp — saving some waiting time and adding an authentic rustic touch.
